
The Ultimate Salad—A Flavor Explosion
Salads don’t have to be boring, and this week, I built one packed with flavor and texture. My salad included:
✔ Grilled chicken
✔ Green olives
✔ Parmesan cheese
✔ Veggie powder
✔ Peach slices
✔ Pistachios & pumpkin seeds
✔ Dried cranberries
✔ Peach glaze sauce as the dressing
It might sound like a lot, but it was absolutely perfect—tangy, sweet, crunchy, and packed with nutrients. Honestly, I could eat a salad like this every day!
We’ve made it to Week 5 of the Pantry Challenge! At this point, creativity in the kitchen is key, and I’ve been stretching ingredients in new ways—some successful, some… not quite.
Peach Glaze Chicken—Take Two (and a Miss)
I gave my peach glaze chicken another try, hoping for a more pronounced peachy flavor. Unfortunately, it was still underwhelming. Not terrible, but not quite the fruity, caramelized goodness I had envisioned. Would I try tweaking it again? Maybe… but definitely not during this pantry challenge. Sometimes, a recipe needs to sit on the back burner (pun intended) before I revisit it with fresh ideas.
Keeping It Simple & Satisfying
Aside from my salad adventures, I kept things balanced with some pantry staples:
✅ My usual harina de maíz (a comforting favorite)
✅ Peach hand pies made with homemade frozen pie crust
✅ Chopped chicken salad lettuce boats—light but filling
✅ My go-to: sardines with hard-boiled eggs (a protein-packed classic)
Even though my peach glaze chicken didn’t hit the mark, this week proved that pantry cooking can still be flavorful and satisfying.
